Peach season is here! I enjoy eating peaches and nectarines in one of two ways, either as is, or dipped into a mix of chili & salt. Coming up with a way to use these peaches that required more than two steps was a bit of a pickle for me. Of course, I could go two routes: Sweet? No. Savoury? It’s got to be.
Going the taco route, here are three recipes: Peach Salsa and Quick-Pickled Red Onions for a suitable top-off which tie into the fresh taco flavours wonderfully! Add some lettuce and greens to the salsa, and it would make a delicious salad! The pickled red onions are seriously so easy to make, with no boiling required! To finish, I continued with the peachy theme with a Peach Mojito, a remix on our usual mint mojito with an added flavour of muddled peach.
Now, look ahead for all three of the recipes that would be perfect in a taco whether peaches are in season or not, these are great ways to add peaches into your meals and drinks.
【1】10-Minute Fresh Peach Salsa
Makes: 2 cups
Prep time: 10 minutes
Ingredients:
- ½ Jalapeno, very thinly sliced
- 2 medium Peach, diced
- ½ medium Lime, squeezed
- 2 tbsp Cilantro, chopped
- 1 small Red onion, diced
- 1 medium Tomato, diced
- Salt and pepper, to taste
- Chili flakes, to taste (optional)
- Dice peach and tomato to the same size. Dice red onion to half the size of peach/tomato. And further dice jalapeno to half the size of the red onion.
- Combine all ingredients except the lime into a mixing bowl.
- Add lime, salt/pepper and chili flakes (if using). Allow to rest for 5 minutes and taste to adjust further. Rest in the fridge until ready to eat.
【2】 5-Minute Pickled Red Onions
Makes: 2 cups
Prep time: 5 minutes
Ingredients
- 1 medium Red onion, diced
- ¼ cup Apple cider vinegar
- ¼ tsp Salt
- ¼ tsp Granulated sugar
- 1 Garlic clove, minced
- Combine all ingredients and mix vigorously until sugar and salt is dissolved.
- Allow mixture to set for 5 minutes before tasting to adjust salt/sugar as needed.
- Rest in fridge to chill until ready to serve.
【3】Peach Mojito Rum Cocktail
Makes: 1 cocktail
Prep time: 5 minutes
Ingredients
- 2oz Rum of your choice
- ½ can Tonic water
- ½ Peach, diced and muddled
- 3+ sprigs of mint
- 1½ tsp of brown sugar
- Dice peach and muddle.
- In the serving glass, muddle mint with rum. Add brown sugar and mix until dissolved.
- Add in muddled peach and ice. Top off with tonic water.
As for our regular ol’ taco sides, we had guacamole, sliced olives (I especially love the cocktail olives for this, the red bugger on the inside is a treat to me!), pork mince, shredded cheese and the keg seasoned pork jowl.
Other delicious ways to use up that basket of peaches are in a white peach sangria, peach bellini (a slushy cocktail that is hard to stop at one), grilled peach for a BBQ, or go a sweet route in a peach cobbler. But we’re all savoury here!
